Save A refreshing, lightly sparkling non-alcoholic drink made with homemade probiotic soda, fresh citrus, and herbs. Perfect for gut health and summer sipping.
I made this probiotic soda mocktail for our weekend brunch, and it was a hit with everyone at the table. The citrus and mint really amp up the flavor while keeping it light and fizzy.
Ingredients
- Filtered water: 4 cups (1 liter)
 - Organic cane sugar: 1/4 cup (50 g)
 - Water kefir grains or ginger bug: 2 tbsp (see notes)
 - Fresh lemon juice: 1/4 cup (60 ml)
 - Fresh orange juice: 1/2 cup (120 ml)
 - Fresh lime juice: 1/2 cup (120 ml)
 - Fresh mint leaves: 8 leaves
 - Orange slices (for garnish): 4 thin slices
 - Ice cubes: As needed, to serve

Instructions
- Prepare the probiotic base:
 - In a clean glass jar, dissolve cane sugar in filtered water. Add the water kefir grains or ginger bug and lemon juice. Stir gently using a non-metallic spoon.
 - Fermentation:
 - Cover the jar with a breathable cloth or coffee filter secured with a rubber band. Let ferment at room temperature (20–25°C / 68–77°F) for 24–48 hours until slightly fizzy and tangy.
 - Strain:
 - Strain out the kefir grains or ginger bug. Discard or reuse for your next batch.
 - Mix flavors:
 - In a pitcher, combine the fermented soda base with orange juice, lime juice, and mint leaves. Stir gently.
 - Serve:
 - Fill glasses with ice cubes, pour the mocktail over, and garnish each with a slice of orange and extra mint if desired. Serve immediately for best fizz.

Recipe FAQ
- → Can I use bottled lemon or lime juice instead of fresh?
Fresh-squeezed citrus delivers a brighter, cleaner flavor and more health benefits. While bottled juice works in a pinch, fresh is best for optimal taste in this mocktail.
- → How do I make a probiotic soda base?
Combine filtered water, cane sugar, and either water kefir grains or a ginger bug. Add lemon juice, cover with a breathable cloth, and let ferment for 24–48 hours until fizzy.
- → What can I substitute for water kefir grains?
You can use a ginger bug for a similar probiotic effect with a slightly spicier flavor profile. Both options will naturally carbonate the drink.
- → How should I store the probiotic soda?
After fermenting, refrigerate the strained soda base in a sealed jar or bottle. Use within a few days for best fizz and freshness.
- → Is this drink suitable for vegans and gluten-free diets?
Yes, as long as honey is not used for extra sweetness, this mocktail is both vegan and gluten-free. Always check cultures for allergen cross-contamination.
- → Can I adjust the sweetness or tanginess?
Absolutely! Add more citrus juice for tang or a splash of agave syrup for a sweeter taste as you mix and serve.
