01 -  Arrange the flour tortillas on a clean work surface. 
 02 -  Evenly spread 1 ounce (about 2 tablespoons) of softened cream cheese over each tortilla. 
 03 -  Place a slice of cheddar or Swiss cheese in the center of every tortilla. 
 04 -  Sprinkle chopped fresh dill and diced red onion over the cheese, then drizzle yellow mustard if desired. 
 05 -  Set one whole dill pickle along the edge of each tortilla. 
 06 -  Tightly roll each tortilla around the pickle, enclosing all fillings. 
 07 -  Cut each roll into 1-inch slices using a sharp knife, or serve whole per preference.
