Craft your own kombucha-style mocktails featuring fruit, tea, herbs, and a gentle fizz. Steep tea, sweeten, and ferment with a SCOBY or starter liquid for several days, then flavor with ingredients like berries, citrus, and ginger. Bottle and let carbonate further before chilling and straining. This method allows you to create personalized flavor profiles like berry-mint or apple-cinnamon, all while enjoying a vegan and gluten-free beverage. Serve over ice or with sparkling water for extra refreshment, perfect for gatherings or solo enjoyment.

Recipe FAQ

Can I use herbal or flavored teas as the base?

Yes, you can, but opt for certified gluten-free and caffeine-free teas if needed. Flavored teas may impact fermentation and taste.

How do I know when it's ready to bottle?

Once the brew tastes tangy and lightly fizzy, it's ready for bottling and flavoring. Taste daily after 5 days to find your preferred balance.

What kind of flavorings work best?

Fresh berries, citrus slices, ginger, herbs, fruit juices, and spices like cinnamon or hibiscus all make great flavoring options.

Is it necessary to use a SCOBY?

A SCOBY is traditional, but you can use plain store-bought kombucha as a starter for similar results.

How do I store the finished drinks?

Store bottled drinks in the refrigerator once desired carbonation is reached. Strain solids before serving for a smoother drink.

Are the drinks suitable for special diets?

These beverages are naturally vegan and gluten-free as long as gluten-free teas and pure flavorings are used.

06 1 tablespoon dried hibiscus petals

Directions

Phase 01

Prepare the Tea Base: Bring 2 quarts of filtered water to a boil. Add tea bags or loose-leaf tea and steep for 10 minutes. Remove bags or strain leaves.

Phase 02

Sweeten the Tea: Stir in the granulated sugar while the tea is still hot until fully dissolved. Let the sweetened tea cool completely to room temperature.

Phase 03

Initiate Fermentation: Pour the cooled sweet tea into a sterilized large glass jar. Add the kombucha SCOBY and starter liquid or store-bought kombucha.
