01 - 8 large eggs
02 - 1/4 cup whole milk
03 - 1 cup shredded cheddar cheese
04 - 1/4 cup shredded Monterey Jack cheese

05 - 6 small flour or corn tortillas

08 - 1/4 cup diced bell pepper

12 - Salsa, to serve

13 - 1/2 teaspoon salt
14 - 1/4 teaspoon black pepper
15 - 1/4 teaspoon smoked paprika (optional)

02 - Place tortillas on the pan, folding edges slightly upwards to form shallow cups.
03 - In a bowl, whisk eggs with milk, salt, black pepper, and smoked paprika until fully combined.
04 - Divide the egg mixture evenly among tortillas. Sprinkle shredded cheeses over each.
05 - Scatter diced cherry tomatoes, red onion, bell pepper, and cooked sausage or bacon if using, atop the eggs and cheese.
06 - Bake in preheated oven for 16 to 18 minutes until eggs are set and cheese melted.
07 - Remove from oven. Top with sliced avocado, chopped cilantro, and a spoonful of salsa. Serve immediately.
