01 - Set oven temperature to 480°F (or as high as possible). Position pizza stone inside oven if using, and allow to preheat thoroughly.
02 - On a lightly floured surface, roll or stretch pizza dough to a 12-inch round. Transfer to parchment paper on a baking sheet or pizza peel for assembly.
03 - In a mixing bowl, combine crème fraîche, minced garlic, chopped dill, lemon zest, salt, and pepper. Stir until evenly blended.
04 - Spread the prepared crème fraîche sauce evenly over the dough, leaving a 1/2-inch border around the edge.
05 - Distribute shredded mozzarella cheese evenly atop the sauce.
06 - Arrange sliced dill pickles and optional red onion on top of the cheese.
07 - Transfer pizza to the oven and bake for 12 to 15 minutes, until the crust is golden and the cheese is bubbling.
08 - Remove pizza from oven, garnish immediately with fresh dill, slice, and serve while hot.
