01 - 12 ounces penne or rigatoni pasta

02 - 1 pound thinly sliced ribeye or sirloin steak

03 - 1 medium yellow onion, thinly sliced
04 - 1 green bell pepper, thinly sliced
05 - 1 red bell pepper, thinly sliced
06 - 2 cloves garlic, minced

→ Cheese Sauce

07 - 2 tablespoons unsalted butter
08 - 2 tablespoons all-purpose flour
09 - 1 1/2 cups whole milk
10 - 1 cup shredded provolone cheese
11 - 1/2 cup shredded mozzarella cheese
12 - 1/4 cup grated Parmesan cheese
13 - 1/2 teaspoon salt

# Directions:

01 - Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain thoroughly and reserve.
02 - While pasta cooks, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add steak slices, season with salt and black pepper, and sauté for 2 to 3 minutes until just browned. Transfer steak to a plate and set aside.
03 - Add remaining tablespoon olive oil to the skillet. Introduce onions and bell peppers, cooking for 5 to 7 minutes until tender. Add minced garlic and stir for 1 minute until fragrant.
04 - Return the browned steak to the skillet with vegetables. Mix in Worcestershire sauce. Remove from heat and set aside.
05 - In a separate saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Gradually add whole milk while stirring continuously. Simmer until the sauce thickens, approximately 3 to 4 minutes.
06 - Lower heat and incorporate provolone, mozzarella, and Parmesan cheese. Stir until cheeses melt and sauce is smooth. Season with salt and black pepper.
07 - Fold cooked pasta and beef-vegetable mixture into the cheese sauce. Toss gently to coat. Warm through over low heat.
08 - Transfer to plates or bowls and garnish with chopped fresh parsley if desired. Serve immediately.
