01 - 2 cups cooked chicken breast, diced or shredded

02 - 3 tablespoons Dijon mustard
03 - 2 tablespoons pure maple syrup
04 - 2 tablespoons plain Greek yogurt or mayonnaise
05 - 1 tablespoon apple cider vinegar
06 - 1 tablespoon olive oil
07 - Salt and freshly ground black pepper, to taste

09 - 1/2 cup red onion, finely diced
10 - 1/2 cup red bell pepper, diced
11 - 1/4 cup fresh parsley, chopped

12 - 4 large flour tortillas or whole wheat wraps
13 - 2 cups mixed salad greens or baby spinach
14 - 1 avocado, sliced (optional)
# Directions:
01 - In a medium mixing bowl, whisk together the Dijon mustard, pure maple syrup, Greek yogurt (or mayonnaise), apple cider vinegar, olive oil, salt, and freshly ground black pepper until the mixture is smooth and well combined.
02 - Add the cooked chicken, finely chopped celery, finely diced red onion, diced red bell pepper, and chopped fresh parsley to the bowl with the dressing. Toss thoroughly to ensure all ingredients are evenly coated.
03 - Lay out the flour tortillas or whole wheat wraps. Distribute a layer of mixed salad greens or baby spinach evenly across the center of each wrap.
04 - Spoon the prepared chicken salad mixture generously onto the greens in each wrap. If using, arrange sliced avocado over the chicken salad.
05 - Fold the sides of each tortilla inwards towards the center. Then, starting from the bottom edge, tightly roll each tortilla upwards to create a secure wrap.
06 - Slice the wraps in half diagonally and serve immediately. Alternatively, wrap them tightly in foil for later consumption.
