01 - In a medium mixing bowl, whisk together the Dijon mustard, pure maple syrup, Greek yogurt (or mayonnaise), apple cider vinegar, olive oil, salt, and freshly ground black pepper until the mixture is smooth and well combined.
02 - Add the cooked chicken, finely chopped celery, finely diced red onion, diced red bell pepper, and chopped fresh parsley to the bowl with the dressing. Toss thoroughly to ensure all ingredients are evenly coated.
03 - Lay out the flour tortillas or whole wheat wraps. Distribute a layer of mixed salad greens or baby spinach evenly across the center of each wrap.

05 - Fold the sides of each tortilla inwards towards the center. Then, starting from the bottom edge, tightly roll each tortilla upwards to create a secure wrap.
