01 - 4 (approximately 400 g) smoked sausages, such as kielbasa or bratwurst, sliced into 2.5 cm pieces

02 - 1 small head green cabbage, cored and sliced into 1.3 cm strips
03 - 2 medium apples, such as Honeycrisp or Fuji, cored and cut into 1.3 cm wedges
04 - 1 medium red onion, cut into thin wedges

05 - 3 tablespoons pure maple syrup
06 - 2 tablespoons Dijon mustard
07 - 2 tablespoons apple cider vinegar
08 - 2 tablespoons olive oil
09 - 1/2 teaspoon kosher salt
10 - 1/4 teaspoon freshly ground black pepper

# Directions:

01 - Preheat oven to 220°C (425°F). Line a large rimmed baking sheet with parchment paper or foil for convenient cleanup.
02 - In a large mixing bowl, whisk together the maple syrup, Dijon mustard, apple cider vinegar, olive oil, salt, and pepper until the mixture is smooth and well combined.
03 - Add the sliced cabbage, apple wedges, and red onion wedges to the bowl with the dressing. Toss thoroughly to ensure all components are evenly coated with the maple-Dijon mixture.
04 - Spread the coated vegetables and apples in a single layer onto the prepared baking sheet. Arrange the sliced sausages evenly over the top of the vegetable and apple mixture.
05 - Roast in the preheated oven for 25 to 30 minutes. Stir the contents of the baking sheet halfway through the roasting time. Continue until the sausages are nicely browned, the cabbage has caramelized, and the apples are tender.
06 - Remove the baking sheet from the oven. If desired, sprinkle with fresh chopped parsley. Serve the sheet pan meal hot.
