01 - Finely grate carrots using a food processor or box grater.

04 - Transfer the bowl to the refrigerator and chill the mixture for 30 minutes to firm up.
05 - After chilling, scoop out 1 tablespoon portions and roll gently between your palms to form balls.
06 - Place the finished balls in an airtight container and refrigerate for up to 1 week.
