01 - 1 cup old-fashioned oats
02 - 1 cup freshly grated carrots
03 - 1/4 cup raisins, optional
04 - 1/4 cup chopped walnuts or pecans
05 - 1 teaspoon ground cinnamon
06 - 1/2 cup creamy nut butter, such as almond, peanut, or cashew
07 - 1 teaspoon vanilla extract
08 - 2 to 3 tablespoons maple syrup, to taste
# Directions:
01 - Finely grate carrots using a food processor or box grater.
02 - In a large mixing bowl, add oats, grated carrots, raisins, chopped walnuts or pecans, ground cinnamon, nut butter, vanilla extract, and maple syrup.
03 - Use a spatula to mix until the ingredients are fully combined and evenly distributed.
04 - Transfer the bowl to the refrigerator and chill the mixture for 30 minutes to firm up.
05 - After chilling, scoop out 1 tablespoon portions and roll gently between your palms to form balls.
06 - Place the finished balls in an airtight container and refrigerate for up to 1 week.
