→ Chicken & Marinade

01 - 2 boneless, skinless chicken breasts (about 14 ounces), cut into bite-sized pieces
02 - 2 tablespoons olive oil
03 - 1 tablespoon Cajun seasoning
04 - 1/2 teaspoon smoked paprika
05 - 1/2 teaspoon garlic powder
06 - 1/2 teaspoon onion powder
07 - 1/4 teaspoon salt
08 - 1/4 teaspoon black pepper

→ Black Bean Filling

09 - 1 can (15 ounces) black beans, drained and rinsed
10 - 1 small red onion, finely chopped
11 - 1 clove garlic, minced
12 - 1/2 red bell pepper, diced
13 - 1/2 teaspoon ground cumin
14 - 1/2 teaspoon chili powder
15 - 1 tablespoon olive oil
16 - Salt and black pepper, to taste

# Directions:

01 - Combine the chicken pieces, olive oil, Cajun seasoning, smoked paprika, garlic powder, onion powder, salt, and black pepper in a bowl. Mix thoroughly and allow to marinate for at least 10 minutes.
02 - Heat a large skillet over medium-high heat. Add the marinated chicken and cook for 5 to 7 minutes until browned and cooked through. Transfer to a plate and set aside.
03 - In the same skillet, add 1 tablespoon olive oil. Sauté red onion and minced garlic for 2 minutes until aromatic. Add diced red bell pepper, ground cumin, and chili powder, cooking for 3 to 4 minutes until the vegetables are tender.
04 - Combine the black beans with the sautéed vegetables, season with salt and black pepper, and cook for an additional 2 to 3 minutes until thoroughly heated. Remove from heat.
05 - Heat tortillas one at a time in a dry skillet or microwave them briefly until soft and pliable.
06 - For each burrito, layer a quarter of the black bean mixture, cooked Cajun chicken, shredded cheese, avocado slices, shredded lettuce, diced tomatoes, and a spoonful of sour cream onto a tortilla. Garnish with fresh cilantro if desired.
07 - Fold the sides of each tortilla inward and roll up tightly. Slice in half if preferred. Serve immediately with lime wedges.
